Honey Almond Meal Muffins.
makes 6 muffins
2 cups almond flour
1/4 cup of arrowroot starch
1/2 tsp sea salt
1/2 tsp baking soda
2 organic eggs
1/4 cup olive oil
1/4 cup honey
1 TBL dried lavender buds (optional)
- Preheat the oven to 350 degrees. Line a muffin tin with 6 muffin papers.
- Mix the dry ingredients in a bowl. Beat the wet ingredients in a bowl.
- Combine the wet & dry ingredients until well incorporated. Don’t over mix, because you don’t want them to be dense.
- Pour into lined muffin tins equally. Bake for 25-30 minutes (until golden brown).
