Dark Chocolate & Coconut Bites

These sweet treats (or devilry, as Jediah called them), are a mix between a no bake cookie and a truffle. They are incredibly simple and you probably already have the ingredients on hand.  Jediah’s parents stopped by and these chocolate-coconut bites were a big hit. So, to Jediah’s parents, here is the recipe.

Dark Chocolate & Coconut Bites
Makes 16-18 small truffles

1/2 cup good quality semi-sweet chocolate chips
1/2 cup natural smooth peanut butter or almond butter
1/3 cup maple syrup
3 TBL dark cocoa powder
1 tsp pure vanilla extract
a pinch of sea salt (if your nut butter is not salted)
1 1/4 cup of unsweetened shredded coconut, + more rolling, but this is optional

  1. In a medium sized pot, over medium low heat, melt chocolate, nut butter, syrup, cocoa, vanilla & sea salt. Once the everything is melted and combined (about 3-4 minutes), take off the heat & stir in the coconut.
  2. It will be a bit thick. Let it cool for a minute. Then, using your hands form tablespoon sized balls (like a ping-pong ball size). If you want, you can roll in extra coconut. I like it either way, Jediah prefers it without…so it’s up to your preference.
  3. Cool in the refrigerator for at least 20 minutes. Keep stored in the refrigerator in an air tight container.
