Flourless Almond Butter & Semi-Sweet Chocolate Chip Cookies

This recipe is the marriage of a few different recipes that I found in a search for naturally gluten-free desserts. These cookies contain no flour and no dairy. They are a simple little treat to satisfy your sweet tooth.


Flourless Almond Butter & Semi-Sweet Chocolate Chip Cookies
Makes 15 cookies

1 cup of smooth almond butter
3/4 cup coconut sugar
1 free-range egg
1 tsp vanilla extract

1 tsp baking soda
a pinch of sea salt

1 cup semi-sweet chocolate chips

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl beat together almond butter, sugar, egg and vanilla until creamy. Add baking soda and sea salt. Fold in the chocolate.
  3. Make little balls of dough & place them 1″ apart on the baking sheet. Bake for 12-14 minutes. Cool for 5 minutes while they are still on the baking sheet, then transfer to a cooling rack.
